Orange Chicken



Orange Sauce for Stir Fry

Directions:

    Place chicken pieces in large bowl.

    Stir in egg, salt, pepper and 1 tablespoon oil and mix well.

    Stir cornstarch and flour together.

    Mix flour mixture and egg mixture. (I left these mixtures separate and just dipped in egg and then in flour.)

    Add chicken pieces, stirring to coat.

    Heat oil for deep-frying in wok or deep-fryer to 375 degrees.

    Add chicken, small batches at a time, and fry 3 to 4 minutes or until golden crisp.

    (Do not overcook chicken).

    Remove chicken from oil with slotted spoon and drain on paper towels; set aside.

    Clean wok and heat 15 seconds over high heat.

    Add 1 tablespoon oil.

    Add ginger and garlic and stir-fry until fragrant; about 10 seconds.

    Add and stir-fry crushed chiles and green onions.

    Add rice wine and stir 3 seconds.

    Add Orange Sauce and bring to boil.

    Add cooked chicken, stirring until well mixed.

    Stir water into remaining 1 tablespoon cornstarch until smooth and add to chicken.

    Heat until sauce is thickned.

    Stir in sesame oil and orange zest if desired.

    Serve over jasmine rice.

yes! I love Jasmine rice also! We made this last Saturday and we will be doing it again very soon! so Yummy!

Joe introduced me to these, and Paula Deen has a recipe for them on Food Network . So I am jumping to the conclusion that they are popular in the South... :) Here's how we made ours. Heat 2 inches of vegetable oil in a large pot on medium heat. You want to heat to about 350 degrees, so we used a candy thermometer to monitor the temp. Prepare the toppings. Note - For the toppings, we didn't actually measure any of the ingredients, just eyeballed it. But this is about how much we used. Auntie Katie's Pizza Dough

1 pkg Yeast (1TB) 1 TB Sugar 1 1/2 C Really warm water Put the water in a bowl and sprinkle the yeast and sugar on top and let set until foamy. For extra speed I set the bowl in the sink with HOT water surrounding the bowl. This will help the yeast activate faster. Add 2 1/2 C Flour 1 tsp Salt Mix all together. Let rise until double in bulk. (For a speedy trick I put it in the oven on no more than 100 to help it rise faster.) Punch down and grease one cookie sheet and spread dough over to fit the sheet. Don't put toppings on it yet. Poke it with a fork just enough so it doesn't puff up. Bake at 400 for 10 minutes. Or just before it turns brown. Bring it out and top with sauce and cheese and toppings. Put it back in the oven and bake until cheese melts. For me it is all about the sauce you use and the kind of cheese I still have yet to find the perfect combo but we LOVE the crust especially since you pre bake you won't ever have it come out doughy.
