Chicken Cashew Casserole

Took this dish to a church Christmas dinner and got a few requests for the recipe so I thought I'd share it here. Chicken Cashew Casserole 1 cup diced celery 1/3 cup chopped onion 1/2 cup diced green pepper 1 T. butter 1 can cream of mushroom soup 1/2 cup milk 2 cups diced, cooked chicken 1 cup salted cashews 13 oz. chow mein noodles Preheat oven to 350 degrees. Saute celery, onion and green pepper in butter. In a bowl, mix soup and milk. Add sauteed veggies and chicken. Add cashews and half of the chow mein noodles. Put into baking dish. Bake for 25 minutes. Top with remaining chow mein noodles and return to oven for 5 min.

Amy's Southwestern Chicken Lasagna

I went to Houston, TX to visit my sister last week and ate some very yummy Southwestern Chicken Lasagna in a little cafe there. I knew my hubby would love it so I tried recreating it for his birthday dinner last Sunday. It wasn't exactly the same, but everyone loved it and Mike immediately put it on his top ten list. So here's my version: 3 or 4 marinated, grilled chicken breasts, chunked (I used a fajitas marinate from a bottle) 12 lasagna noodles 1 Tbsp. olive oil 1 green bell pepper, chopped 2 cloves garlic, chopped 1 or 2 Tbsp. canned Jalapeno peppers, diced 1/2 cup frozen corn kernels 1 (15oz.) can black beans, rinsed and drained 1 (15oz.) can diced tomatoes 1/2 cup salsa 1/2 cup chopped green onion 1/2 tsp. chili powder 1/2 tsp. cumin 1/2 cup chopped fresh cilantro, divided 1 cup ricotta cheese 1/4 cup sour cream 8 oz. monterey jack cheese, shredded 6 oz. mozzarella cheese, shredded, divided 1. Meatless Enchilada Casserole

1 can of black beans (but can use other if you prefer) 1 can of diced tomatoes (I use the ones that have like garlic/basil, or you can do the fire roasted ones for extra kick) 1 can of corn 2 T lime juice cilantro 6 tortillas 2 - 3 cups cheese 8x8 or 9x9 casserole dish Drain all three canned items. Then mix together in a bowl with lime juice and a bit of chopped cilantro. Cut all tortillas in half and line the bottom of the casserole dish with 2 tortillas, having cut edges on the edge of the dish. Spoon in half of the mixture over tortillas and cover with cheese. Layer tortillas again, then mixture, cheese. Last add a final layer of tortillas covered with cheese. Make sure you use a generous amount of cheese on the top layer so the tortillas don't get too crispy. Can top with sour cream. Is yummy with spanish rice. Bake for 20 minutes at 350°. serves 6-8
