Pumpkin Chocolate Chip Pancakes

I really can't figure out why I don't like pumpkin pie, because seriously I LOVE everything else pumpkin!!
Here's a yummy one:


Pumpkin Chocolate Chip Pancakes


1 cup all-purpose flour
1 1/2 tablespoons light or dark brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 tsp. ground cloves
1/8 tsp. ground ginger
1 cup buttermilk, shaken (I just used regular milk
1 egg
1/4 cup pumpkin puree
1/2 tablespoons of butter, melted and cooled slightly
1/2 cup chocolate chips

In a medium bowl, sift together the flour, brown sugar, baking powder, baking soda,
salt, and spices: cinnamon, nutmeg, cloves and ginger. In a measuring cup (or small bowl),
measure out the milk. Add the egg and lightly beat. Next, mix in the pumpkin puree
until completely blended. Pour in the slightly cooled melted butter and mix. 

Add the wet ingredients to the dry ingredients and mix until just combined.
The batter should have some small to medium lumps.
Heat up your griddle or cast iron skillet over medium low-heat and brush with
1 tablespoon of butter. Scoop the batter, using a 1/4 cup measure, to the warm skillet.
Top each pancake with desired amount of chocolate chips. I added about 8-12 chips
per pancake. Cook until small bubbles form on the surface of the pancake and then flip.
 Cook on opposite side for about 40 seconds, or until golden brown.

Beryl's Crab Stuffed Mushrooms

From Beryl ....a co-worker of Mike's...I couldn't stop eating these and they were a hit at the New Years party I made them for also! 1 lb. fresh mushrooms 1 T. butter 1/2 lb. crab meat 2 8 oz. packages cream cheese 2 T. mayonnaise 1 tsp. garlic salt 5 to 10 drops of Tabasco Sauce Clean mushrooms and removed stems. Set caps aside. Chop stems and saute in melted butter. Add remaining ingredients and heat til smooth. Bake covered at 350 degrees for 20 minutes. Spoon hot mixture into mushroom caps. Top them with shredded cheese and dust them with Old Bay spice. Place them back in the oven, just to melt the cheese. ** Mixture can also be served as a dip on chips or crackers if you're not a mushroom fan!
